CHEDDAR BBQ CHICKEN FOIL PACKET MEAL

INGREDIENTS

  • 16 ounces Chicken Breast, boneless, skinless, cubed
  • 4 ounces Cheddar Cheese, shredded
  • 1 Red Bell Pepper, large dice
  • 1 Green Bell Pepper, large dice
  • 1/2 Red Onion, thinly sliced
  • 2 ears Corn, cut into 1/2 inch slices
  • 1/3 cup BBQ sauce


INSTRUCTIONS

OVEN INSTRUCTIONS:
  1. Preheat oven to 400 degrees F.
  2. In a bowl toss cubed chicken breast and 1/2 of the BBQ together. 
  3. Cut 4 sheets of aluminum foil large enough to wrap around the chicken and add-ins.
  4. Place 4 ounces of the BBQ cubed chicken breast on each sheet of foil.
  5. Divide the vegetables between each foil packet and fold up the foil sealing the ingredients tightly inside.  
  6. Place foil packets on a baking sheet and bake for 20-25 minutes or until chicken is cooked through.
  7. Open foil packets and sprinkle with cheese letting it melt before serving.

GRILLING INSTRUCTIONS:
  1. Heat grill.
  2. In a bowl toss cubed chicken breast and 1/2 of the BBQ together. 
  3. Cut 4 sheets of aluminum foil large enough to wrap around the chicken and add-ins.
  4. Place 4 ounces of the BBQ cubed chicken breast on each sheet of foil.
  5. Divide the vegetables between each foil packet and fold up the foil sealing the ingredients tightly inside.
  6. Place foil packets on the grill and cook for 20-25 minutes or until chicken is cooked through.
  7. Open foil packets and sprinkle with cheese letting it melt before serving.


NOTES

Note: If you are concerned about cooking your food in aluminum place a piece of parchment paper on your foil, then place the food on the parchment paper. Now when you fold up your foil packet the parchment paper will make a barrier between the aluminum and your food but the aluminum on the outside will make it safe to cook over an open flame. Note: This is not required it is just an option.
